
Grapes: Vernaccia di San Gimignano 100%
Vinification process: hand harvested grapes in small 15kg cases. Refrigeration for 12-18 hours at controlled temperature, brief maceration in contact with the grape skins for 8 hours, then gently pressed.
Alcoholic fermentation in 25hl oak barrels at controlled temperature.
Aging and fining in same barrels with frequent batonnage for 5-6 months.
