Grapes: Sangiovese 100%

Vinification process:hand harvested grapes in small 15kg cases at fulfilment of specific fenolic maturity.Refrigerated 12-18 hours at controlled temperature.

Alcoholic fermentation in contact with the grape skins at 25-28 °C for 15-18 days with frequent FOLLATURE and RIMONTAGGI.

Aging and fining in barriques and tonnaux for 12-14 months.This wine is neither stabilized nor filtered.
